Farmhouse Cheesemaking Tour & Tasting with Irish Soda Bread
Teresa’s family have farmed the historic and rich landscape of southeast Galway, for almost 200 years, converting the farm into a dairy enterprise in the 1960s. After travelling the world and spending some time on a Maori farm in New Zealand she got great insight into developing an on-farm food production business. It was always her dream to return home to her family farm in Galway. Having studied the craft of cheesemaking, Teresa is today the brainchild behind the on-farm cheesemaking and although a relative newcomer, has created a stir with unique offerings of Swiss inspired cheese.
About The Experience
You will meet Teresa who shares her family story and passion for cheesemaking as she takes you on a tour of her family farm, walking through green fields and viewing the cows in pastures. This is where her cheesemaking story begins. Only using milk from her own cows, you will witness first-hand the “low carbon foot print of her cheese” as the milk used, is taken from the milking parlour located right beside the cheese making building. You will see the cheese production room, hear how the cheese is made, what happens while it's maturing and understand why it's taste is unique. After the tour you will have the chance to taste the raw milk straight from the cows, 50 litres going into one 5kg wheel of cheese. Then you will savour the unique taste and flavour of Teresa’s Swiss-type cheese served in the old farmhouse, accompanied by homemade brown Irish Soda bread, local chutneys and fruit. And of-course Irish farmhouse hospitality would not be complete without the enjoyment of a cup of tea or coffee as you chat and soak up this homely, local, on-farm experience.
